Streptococcus salivarius subsp. thermophilus is a streptococcus bacteria used to produce yogurt. It works symbiotically with Lactobacillus acidophilus subsp. bulgaricus. Both are homofermentative, produce lactic acid quantitatively in addition to carbon dioxide and alcohol. The optimum temperature for their growth is about 42°C.
